Psar Thmey Seafood Finds




The Psar Thmey or Central Market is the go-to place for fresh seafood in Phnom Penh. The best part is it also has a row of food stalls offering assorted grilled meats and fish as well as a bevy of traditional Cambodian dishes. I will be exploring and featuring more street food (eat photography!) from Cambodia which, as luck would have it, is my new home for a while.

Tikoy Mo!

Ayon sa wikipedia, "ang tikoy ay isang matamis at malagkit na mamon o keyk ng mga Intsik na niluluto sa pamamagitan ng pagpapasingaw (steaming?) o pagprito".

Nakalatag na ang iba't-ibang variety nito sa mga eskaparate ng mga tindahan sa Binondo, hanggang sa mga bangketa, tila paghahanda sa nalalapit na Chinese New Year.

P'akbet and Adobong Baboy: a Match Made in Heaven







Pinakbet is an Ilocano dish of mixed vegetables steamed in the broth of tomato, ginger,garlic and bagoong (brown fishpaste). To cook p'akbet, a slow fire is ideal: it allows the vegetables to unfold their flavor unhurriedly and imbue the broth with their essence. In my version, I use round eggplant, baby ampalaya (bitter melons), malunggay fruit and kamote (sweet potato). Sili is used for a garnish, or as a main ingredient itself.

Adobo is pork simmered in soy sauce, vinegar, peppercorns and garlic. This is perfection in itself but dahon ng laurel (bay leaf) makes it sublime.

Usapang Sabaw

Ang diningdeng ay isang uri ng lutuing Pilipino na may mga gulay, sabaw at bagoong.

Diningdeng na may kicker

Mga sangkap:
4 na tali ng saluyot
2 tali ng bulakalak ng kalabasa
1 tali ng bunga ng malunggay
Bagoong isda

Sahog (optional)
Mga tirang inihaw o piniritong isda.

1. Magpakulo ng tubig (4-6 tasa).
2. Pagkulo, ihulog ang sahog (dabest ang leftover na inihaw na bangus or tuna), pakuluan ng
mga 5 minuto.
3. Ihulog ang saluyot ( pakuluan uli mga 5 minutes)
4. Ilagay ang bagoong isda ( 5 kutsara, o kaya's tikman at tantyahin)...
5. Ihulog ang bulakalak ng kalabasa at malunggay
6. Pigaan ng 4-6 kalamansi (ito ang kicker!)
